JOB DESCRIPTION AND POSITION REQUIREMENTS

A part-time research assistant position is available in the Food Science Department at The Pennsylvania State University (University Park campus) as part of an externally funded research project entitled "NonAlcoholic Beer Production Using Enzymatic Treatment of Barley Wort for Optimized Fermentation with NonSaccharomyces Yeasts."

The primary objective of this project is to demonstrate that modulation of the fermentable sugar profile through targeted enzyme addition during the mashing step can enable the production of nonalcoholic and lowalcohol beer (NABLAB) with reduced residual sugars and enhanced utilization of alternative carbon pathways. A secondary objective is to evaluate the impact of different dryhopping regimes on the physicochemical properties and flavorrelated characteristics of selected NABLAB formulations.

Required Qualifications
* Ph.D. in Food Science, Biochemistry, or a closely related discipline, completed by the start date.

Preferred Qualifications
* Demonstrated experience in carbohydrate and organic acid biochemistry
* Experience working with microbial systems and fermentation processes
* Familiarity with brewing science is advantageous but not required
